Brocoolli and cheese casserole??

Does any body have a broccolli and cheese casserole dish recipe with real cheese and not that velveta stuff??Every recipe I find uses velveta and I do not care for it. Thanks!!!!

My mom has always used this simple recipe
1 bx of frozen brocolli
2 eggs
1tbsp mayo
1 can cream of chicken
1 pk of shredded cheddar cheese

This is a really simple recipe you might have to add some salt for flavoring and make sure that the broccoli is completely thawed out or you willl end up with a lot of water and that veggie gives off water.

Joan Lunden's Healthy Cooking

Joan Lunden's Healthy Cooking

$4.99

Six years ago, no one in Joan Lunden's weekly audience of 25 million could guess how frustrated she was with her weight. Three pregnancies, three kids, a high-pressure career, and an unhappy marriage seemed to undermine her every effort to lose weight. But then Lunden decided to fight back. Today, she's fit and trim - and feels great. She still considers herself a work in progress, but her newfound energy fuels her career, her athletic passions, and her total state of well-being. Lunden has spent years in the kitchen cooking for her family, and the philosophy behind her recipes is simple: in addition to being low in fat, high in nutrition, and utterly delicious, each dish is easy to prepare (everyone is pressed for time), uses readily available ingredients (what is quinoa, anyway?), and adapts well to substitutions (if you hate peppers, use carrots instead). Each of the more than 100 recipes comes complete with nutritional information, serving size, and substitution possibilities. There are tasty appetizers like Quesadillas, soul-satisfying soups such as Italian Minestrone, and more than a dozen tempting salads, including Curried Chicken Salad with Mango. For main courses, Lunden serves up Spaghetti with White Bean Sauce, Chili Burgers, Chicken Fajitas, Roasted Salmon with Herb Crust, and other family favorites. Her daughter's vegetarianism inspired meatless main dishes such as Spinach Frittata with Spicy Tomato Sauce and vegetable accompaniments like Twice Baked Parmesan Potatoes and Sweet Potato and Parnsip Casserole. She also offers fun recipes for kids to make: Pita Pizza, Lasagna, and Macaroni and Cheese. And because everyone deserves dessert, there are Vanilla Cheesecake withFresh Berries, Peach Melba with Raspberry Sauce, Country Apple Pie, and more.

Polish Cookery

Polish Cookery

$17

Poland, like France, is a country where people really know food. One can stop at a wayside inn in the country or at a modest restaurant in a working-class city neighborhood and be served a meal worth remembering. Good food is a tradition. Polish Cookery is an American adaptation of Uniwersalna Ksiazka Kucharska (The Universal Cookbook), long the most famous standard cookbook in Poland. All weights and measures have been converted to American usage, and suitable substitutions are provided for hard-to-get ingredients. The recipes range from the familiar to the exotic and include soups like Polish Mushroom and Barley Soup, Fresh Cabbage Soup, many variations of Barszcz, the famous Polish beet soup, and Sorrel Soup with Sour Cream. The Poles are very fond of pates, dumplings, and meat pastries. In Polish Cookery, you'll find recipes for Meat Patties, Potato Croquettes, Venison Pastry, Partridge Pie, Game Pate, many variations on the celebrated Pierogi, or dough pockets, and Buckwheat Cakes. Authentic entrees include Loin of Venison, Roast Wild Goose, Smothered Pike, Turkey in Madeira Sauce. Chicken Casserole with Currants, Smothered Duck in Caper Sauce, Hussar Pot Roast, Tenderloin Smothered in Sour Cream, and perhaps Poland's most famous dish, Bigos, or Hunter's Stew. To round out the Polish meal, there are recipes for Mashed Turnips and Potatoes, Split Pea Fritters, Stuffed Kohlrabi, Fried Carrots, Mushroom Ramekins, and Pearl Barley with Dried Mushrooms. Finally Polish Cookery offers such dessert treats as Almond Torte, Cracow Torte, Spice Cake, and Almond Babka. Polish cuisine evolved over centuries, a combination of East and West, aristocratic hauteur andpeasant fare. It is a rich culinary heritage that is faithfully represented here in Polish Cookery.

Tom Valenti's Soups, Stews, and One-Pot Meals: 125 Home Recipes from the Chef-Owner of New York City's Ouest and 'Cesca By Tom Valenti and Andrew Friedman, Foreword by Mario Batali

$30

This is the way we love to eat -- slowly braised, cut-with-a-spoon-tender meat resting in aromatic juices just waiting for the perfect piece of bread to come along and sop it up; a steaming bowl of chowder filled with chunks of fish and potatoes in rich broth laced with the smoky-sweet-salty flavor of bacon; a casserole that's spent some serious time in the oven as layer upon layer of creamy, soft cheese, pasta, herbs, and meat meld into a delectable whole.
And as luck would have it, this is the way celebrated New York City chef Tom Valenti loves to cook. Considered Manhattan's grandmaster of comfort food, Valenti has made this beloved cooking his trademark. In fact, on any given night, you'll find him in his wildly successful Upper West Side restaurants Ouest and 'Cesca feeding the world's A-list -- Bill Clinton, Steven Spielberg, Charlie Rose, Jerry Seinfeld, Judy Collins, Joan Didion. Because, of course, this is the food they love to eat, too.
In Tom Valenti's Soups, Stews, and One-Pot Meals, Valenti and coauthor Andrew Friedman dish up the flavor we've come to expect from a New York chef, without any of the fuss. This is food that gets better a day or two after it's made, food to make on the weekend and savor throughout a busy week, food that is perfect for dinner parties and family celebrations.
Here are 125 realistic recipes for the home cook -- most made in one pot -- and all based on the fact that the right ingredients, left alone to cook in a single vessel with virtually no intervention from the cook, steadily build glorious flavor and leave far fewer pots to clean.
The book includes "Variations" and "Tomorrow's Table," tips on ways to embellish a dish by adding vegetables or meats or provide economy by stretching it into another satisfying meal by simply adding another ingredient. Valenti and Friedman embrace what they term "cooking in the real world," encouraging home cooks to use canned stocks and beans whenever appropriat
