Casserole Enchiladas
Good recipes for a couple of guys hangin out this week?
My boyfriend is having a couple friends from out of state come over to our house this week. I have to work so they will be having a bunch of guy time all week. I do want to make some food but not be slaving away in the kitchen.
Some ideas I had in mind are:
Chili
Lasagna
Pot roast w/ carrots and potatoes
Chicken and rice casserole
Enchiladas
…any other suggestions? Mostly casseroles, please. There are no food allergies or any major dislikes so that leaves the possibilities endless.

BTW nice home cooked meals is probably the best option because these are single guys who eat out everyday.
There is really nothing easier than grilling some steaks, baked potatoes and green salad. Most men don’t complain about a nice steak.
Lasagna is always a crowd pleaser and makes great leftovers for lunch the next day but it does take a while to make. I always forget how many dishes I go through to make it…lol.
Steak tacos are always popular in my house. Pan sear some nice tri-tip then thinly slice cross-wise. Serve with a tomato/onion/green pepper salsa, grated cheese and warm tortillas.
If you want to stick with casseroles a good old fashioned oven-baked macaroni and cheese or chicken pot pie might go over well.
I need good family recipes for a family of three?
I usually make tacos, spaghetti, chicken casserole, hash brown casserole, enchiladas, roast, stir fry. And any of the the other basic dinners. I am just getting sick of the same things every other week. I would like them to be some what healthy, but just really good. Thanks
Shrimp and Sausage Jambalaya
Ingredients
1 teaspoon canola oil
8 ounces andouille sausage, (may be hard to find) or low-fat kielbasa, cut into 1/4-inch-thick slices
1 16-ounce bag frozen bell pepper and onion mix
1 14-ounce can reduced-sodium chicken broth
2 cups instant brown rice
8 ounces raw shrimp, (26-30 per pound), peeled and deveined
1.Heat oil in a Dutch oven over medium-high heat. Add sausage and pepper-onion mix; cook, stirring occasionally, until the vegetables soften, 3 to 5 minutes.
2.Add broth to the pot and bring to a boil. Add rice, stir once, cover and cook for 5 minutes. Add shrimp and stir to incorporate. Remove from the heat and let stand, covered, until the shrimp are opaque and cooked through, 5 to 6 minutes. Fluff with a fork and serve.
