Question for good cooks about my Tortellini Casserole?

OK so the recipe calls for (from bottom to top) alfredo sauce, then tortellini, then broccoli, then repeat this and lastly top with bread crumbs.

Yes, it would freeze well and be fine to take with you. However, if you put the breadcrumbs in other places it will cook just fine, but they will taste different. The reason they taste so good is from the way they cook on the very top. Layered inside they will get soggy from the sauce, and absorb more flavor. I wouldn’t bother adding more, it might just change something that is already good!

Can I put a glass dish inside my slow cooker?

I’ve never done it, but seeing as it’s Pyrex, which is oven proof, I see no reason to think it would not be OK. I am a mechanical engineer, so it’s an educated guess. I suspect the cooking time might need to be increased, seeing as how the food will not be touching the heated walls of the crock.
