Easy Sweet Potato Casserole
a good easy sweet potato casserole recipe with NO pecans?
it has to be easy.
im not a great cook.
my mom loves sweet potato casserole but i lost my recipe.
and she is allergic to pecans. and all of the recipes i can find have pecans.
i tried one without the pecans to see if it would work and it didn’t.
I can’t imagine why a recipe made without pecans wouldn’t work. Pecans don’t do anything for the chemistry of this dish, they simply add crunch and flavor. Pecan pie baked without the pecans is still pie, albeit one that’s simply sweet and creamy with no crunch or pecan flavor. See what I mean? So perhaps you had a bad recipe to begin with.

Sweet Potato Casserole
Ingredients:
3 cups mashed sweet potatoes
1 cup brown sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/2 cup milk
1/2 cup melted butter

Topping:
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter
Preparation:
Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix remaining ingredients together and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned.
Serves 6 to 8.
Pumpkin Pie
Ingredients:
1 1/4 cups pumpkin puree, canned or fresh
3/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon all-purpose flour
2 eggs, lightly beaten
1 cup evaporated milk, undiluted
2 tablespoons water
1/2 teaspoon vanilla extract
1 unbaked pastry shell (9-inch)
whipped cream or whipped topping, for garnish
Preparation:
Combine pumpkin, sugar, salt, spices, and flour in a medium mixing bowl. Add eggs; mix well. Add evaporated milk, water, and vanilla; mix well. Pour into pastry-lined pie pan. Bake at 400° for 15 minutes; reduce heat to 350° and bake about 35 minutes longer, or until center is set.
Serve this delicious pumpkin pie with a dollop of whipped cream and a sprinkle of cinnamon sugar!
