Meatless Casserole
I need some meatless casserole ideas using rice?
This is my family’s all-time favorite veggie dish, but I’ve used it as an entree for vegetarians too…
SPINACH RICE & CHEESE
1 10-oz. frozen chopped spinach (thawed & squeezed out)
1/2 stick melted butter (1/4 c)
8 oz. shredded cheese (whatever you like)
1 c. raw Minute Rice
1/2 c. chopped onion
1 tsp. garlic salt
1/2 c. sour cream
Mix all together in 9×13″ pan and bake at 350 for 1 hour, covered…..
