What is the highest temperature allowed in oven when using a clear pyrex casserole dish?
I want to make creme brulee-which requires broiling at the end of cooking to carmelize, I don’t have any ramakins or souffle dishes…so I thought maybe a pyrex dish
I have broiled in them with no problems. So that would be 550 – I think.
What causes hot glass to break in cold water?
I just lost my favorite Pyrex casserole dish cos I’m stupid. I placed it in cold dish water straight out of the oven and it exploded right in my hands. Shocked the hell out of me. I guess what I want to know is what is the scientific explanation for this type of occurrence? Thanks.
First, the term for this is called “Thermal Downshock.”
What happens is, the cooled surface shrinks in comparison to the glass inside, and the tension makes the glass break.
Abrasions, chips, and knife scores can intensify the breakage.
Thermal Downshock can also happen if you put a hot glass dish on a cold surface (granite countertop, etc). So always put the dish on a cooling rack, cooling pads, trivets, or potholders. If you have a gas stove, you can put the dish on the burner grates and it will be safe.
can I cook shortbread in a pyrex casserole dish instead of a shortbread mold?
I don’t want to or have the time to buy a shortbread mold to cook shortbread for Christmas, so I was wondering if a pyrex casserole dish will do. And if so will I need to add some tinfoil or maybe spay it will butter flavored pan? Thxz for any advice
