Sweet Potato Casserole Topping

Sweet Potato Casserole Topping
Sweet Potato casserole topping?

Any guesses at what crunchy topping they use at Golden Corral for their sweet potato casserole? I don’t think it’s either corn flakes or chopped pecans, which appear to be the common ingredients.

I don’t know what they use at Golden Corral, but this recipe is Wonderful! It’s the only way we do it for Thanksgiving since my sister-in-law joined our family in 1977.

SWEET POTATO SOUFFLÉ (Marilyn)

1-18 oz cans mashed sweet potatoes (or 4 cups baked & mashed)
1 c sugar
2 eggs (beaten)
¾ stick melted butter
½ c milk
½ t nutmeg
½ cinnamon

Topping: ¾ c crushed corn flakes or Special K, ½ c chopped pecans, ¾ stick melted butter, ½ cup brown sugar

Bake in 400°F oven for 20 minutes, spread topping & bake another 10 minutes.

So as you can see, ours is cereal, pecans, brown sugar and butter all stirred together and then spread on top!
